Olive oil is medicinal. It regulates the stool, helps the excretion of gallstones, and also serves as a base for the production of ointments against skin diseases. Prevents the action of various bacteria. Olive oil is characterized by a pleasant and unique aroma that originates from various ingredients (vitamin E, phenols, hydrocarbons, sterols, aromatic substances...) that are present in very small quantities. Most of the oil (more than 95%) consists of fatty acids, of which the most abundant is monounsaturated oleic acid (65–85%), which makes olive oil the healthiest and most stable (ideal for cooking). A whole series of chlorophyll granules and vitamins are bound to vegetable fats, and these vegetable fats are contained in each leaf or petiole.

The olive tree thrives wherever the climate conditions are the same as in the Mediterranean. The tree has branched roots that can draw enough water from the soil even during droughts.
